From Jolinda Hackett, your Guide to Vegetarian Food
There's no wrong way to make classic American mac and cheese. When I was in college, my friends and I used to make macaroni and cheese out of the box. We'd add diced tomatoes, goat cheese and load it up with lots of black pepper. It was absolutely tasty! Here's a few other ways to make this favorite classic dish.

Mac and cheese with avocadoes
Macaroni and cheese is one of my favorite high-carb comfort foods. You're never too old to love mac n' cheese, right? Try this California-inspired mac and cheese recipe with creamy avocados. There's only one word for this: Yum. Capital Y.

Gourmet mac and cheese with apples
If you feel a bit silly making macaroni cheese to eat as an adult, try this more grown up east coast mac and cheese. It's a gourmet version, with apples, a splash of sherry and a panko crust topping. Mouthwatering, isn't it?

Super Southwest Mac and Cheese
Start with an ordinary box of mac and cheese, add in some beans, salsa and tofu, and viola! You've got a full meal for kids or adults packed full of protein. This is a great way tot ake a food kids love - boxed mac and cheese - and make it a bit nutritious. Even the pickiest veg kids will like this!
