If someone says the heat is allucinante, hallucinogenic, it's pretty bad, and though this week started out average for the season, it has gotten considerably worse, with temperatures in the 40s (that's 100 + F) in the cities -- according to the paper, Milano was hotter than Cairo yesterday. When it gets like this those who can head into the mountains, or for the coast, while the rest stay inside, hoping the grid can supply enough power for all the air conditioners. And in terms of food?

Gelato is an obvious bet
The easiest to make is certainly sorbetto al limone, lemon sorbet (which is also one of the most refreshing). But it's not the only gelato:

The other thing that can be very nice when it's fearsomly hot out is a granita, made with shaved ice and fruit syrup. Yesterday some friends made us fantastic granita al limone, but you can use any fruit you like to make the syrup. And while we're on the subject,

Hot? Pesto Sauce!
Pesto alla Genovese, an inspired Ligurian sauce made with basil, garlic, olive oil, cheese, and pine nuts, is one of the nicest summer pasta sauces. It's easy to make, quite tasty, and served the Ligurian way, with pasta and vegetables (traditionally string beans and finely sliced potatoes, cooked with the pasta) is very refreshing. If you have trenette the dish will be more authentic, but spaghetti will also work.
