Italians prefer to cook over hardwood coals, and depending upon what, exactly, you decide to cook, you may want to have a hotter area for searing (steak, for example), and an area with fewer coals that allows slower cooking, say of chicken.
A grigliata mista might include: | Pesce alla Griglia Live near the coast or a waterway, and have access to good fresh fish? Then why not grill fish rather than meat? Good fish over the coals can be extraordinary, and you can also grill other things, for example prawns or scampi, and squid.
