From Jolinda Hackett, your Guide to Vegetarian Food
Potato salad is one of the most all-American things I can think of, after baseball, apple pie and white picket fences, of course! Get ready for the fourth of July with these classic American potato and pasta salad recipes, and apple pie, too. Happy 4th, everyone!
P.S. Thanks to those of you emailed me to let me know that The Everything Vegan Cookbook is described online as a lovely collection of Filipino seafood recipes. I've emailed the company to let them know!

Vegetarian potato salads
Use tri-colored potatoes (red, regular and purple - err, blue!) for a patriotic side dish, or, leave the fancy colors to the fireworks experts and just enjoy your vegetarian potato salad. As an extra tip, Baco-s brand "bacon bits" are actually vegetarian (no, really - read the label!) so sprinkle a few on your potato salad for a bit of crunch. Here's a few vegetarian potato salad recipes for your meat-free fourth:
  • Five-star German-style potato salad (pictured)
  • Basic vegan potato salad
  • Classic creamy vegetarian potato salad
  • No-mayo healthy vegan potato salad with kale and peas
  • More vegetarian and vegan potato salad recipes

  • Meat-free pasta salads for summer
For a super quick and easy pasta salad, toss together some Italian salad dressing or a vinaigrette with some cooked pasta and veggies and voila! Pasta salad really is that easy! Adding chopped sun-dried tomatoes, artichokes, pinenuts or capers adds a gourmet touch to a plain pasta salad. Here's a few vegetarian pasta salad recipes to try:
  • Italian pasta salad with avocado (pictured)
  • Easy artichoke pasta salad
  • Fat-free vegan pasta salad
  • Asparagus dijon pasta salad
  • More vegetarian pasta salads

  • Fourth of July apple pie
Vegans are in luck, as apple pie is easy to make without the use of any animal products. Here's a few ways to make apple pie, this Fourth of July:
  • Grilled apple pie (yes, grilled! Pictured)
  • Five-star easy vegan apple pie
  • Gourmet vegan apple torte (in case you're bored of apple pie!)

  • Veggie burger tips for the 4th of July
Store-bought veggie burgers are great, but they can be so pricey, and making your own homemade veggie burgers can be a bargain. Need some pointers and tips to help you avoid some of the pitfalls of homemade veggie burgers? Making homemade veggie burgers can be more of an art than a science, but there's a few things you can do to improve your "art". Read more.
