Corkscrews with Zucchini Sauce Scaloppine 9or Chicken Breasts) al Marsala Pesce alla Griglia, Italian Grilled Fish Things that are nice cool When it gets hot -- and temperatures have climbed thanks to a couple of days of clear skies -- it's nice to eat cool dishes. They're refreshing. Very. Insalata Caprese, Mozzarella & Tomatoes Eggplant and Spaghetti Timballo Farfalle, and a Bell Pepper Arugola Sauce Bowtie Pasta Salad With Chicken and Beans in a Spicy Sauce Beans! Fagioli! You might not think of beans as a summer legume, but they are coming into season, and the markets will soon have bins filled with pods. There is shelling them, granted, but cooking fresh beans is quick and easy, and they have a richness of flavor dried beans simply lack. Serve chilled with a drizzle of oil and some salt and you have a side dish. Add crumbled canned tuna and sliced onion (if you like it), and also crusty bread, a salad, and a crisp white wine, and you have a wonderful refreshing light meal.
