| Polenta, made from cornmeal, is absolutely underrated, in my opinion. I love that the texture is so different from other vegetarian and vegan foods, and I love the versatility of using it as a base to add various veggies and spices. It can be a main or a side, or even a sandwich, and there's ways to eat it for breakfast, lunch or dinner. When homemade, it's also a bargain. And that, of course, is always a plus, in my book! |
