Freshly cooked crispy tempura are delicious, but what do you do when you have tempura leftovers?

Simmered Tempura
When I make lots tempura and have some leftovers, I like making this dish the next day. It's called tempura-no-tamagotoji. Tempura are simmered in soy sauce based dashi soup and cooked with egg.

Tendon
Tendon is a popular Japanese rice bowl with tempura topping. This recipe uses vegetable tempura, but you can use your favorite tempura.

Gyudon
Gyudon means beef donburi (rice bowls), and it's a quick one dish meal to have for lunch or dinner like other Japanese donburi dishes. Plain steamed rice is topped with simmered beef which has a sweet flavor. I usually simmer thinly sliced beef with some onion and serve with beni shoga (red pickled ginger).
