Did you know that April 9th is National Chinese Almond Cookie Day? To celebrate, here is a recipe for these delicious cookies that are a staple at Chinese bakeries. Plus, since April is National Soyfoods Month, a feature on tofu with lots of recipes.

Uncle Don's Chicken Curry
An easy to make comfort food for weeknights - Chicken thighs and vegetables are seasoned with curry powder and simmered in coconut milk. Got leftover hard boiled eggs from Easter? Peel and chop and use as a garnish, along with your choice of nuts, green onions, chopped cooked bacon, or a nice mango chutney

Cooking With Tofu
Tofu - people either love it or hate it. Here is basic information on tofu, including types and storage information and freezing tips, along with tofu recipes, including stir-fried and deep-fried tofu, tofu shakes and more.

Hot Chicken Salad
