Take inspiration from nature when building a healthy vegetarian salad, and fill it with the best the farmer's market has to offer! Greens such as watercress, arugula or frissee form a textured base for gourmet salads and a nice change from the usual iceberg or romaine blends. Add color, texture and unusual ingredients to make your gourmet salad unexpected and exciting: blueberries, pinenuts, candied pecans, fennel, edamame, or, if you're not vegan, an artisan cheese. And for the final touch, of course, you need a gourmet homemade salad dressing.

Watercress, frissee and avocado salad
A healthy and fresh watercress salad with frissee lettuce and avocado. Spicy jalapeno, tangy lime and a dash of salt add plenty of exciting flavors to this gourmet frissee salad.

Grapefruit, fennel and avocado salad
A gourmet salad with grapefruit, macadamia oil, fennel and fresh mint. This recipe works equally well with oranges in place of the grapefruits. Blood oranges, if you can find them, are especially pretty.

Quinoa, harvati and blueberry salad
Unpredictable? Certainly! Amazing? Unquestionably! Quinoa, blueberries, harvati cheese in a peppery vinaigrette may not be your average salad, but it certainly will be a memorable addition to any gourmet meal. Serve this as a side or an entree and enjoy a healthy gourmet meal.

Homemade salad dressing recipes
Top off your gourmet salad with a homemade salad dressing. One of my favorites is a homemade Goddess dressing (pictured) made from tahini.
