I love eating vegetables, and will happily make a meal out of a mixed vegetable dish. So when I call these "side casseroles" don't think for a minute that I don't wholeheartedly endorse them as main dishes, too!

Baked Hominy Casserole
This hominy casserole is similar to a corn au gratin casserole bake. It's a great one-dish vegetarian casserole meal perfect for feeding your family on a busy weeknight. Add a bit of diced tofu to the mix for a bit of protein or, if you're cooking for picky eaters, sprinkle the top with potato chips instead of bread crumbs for a bit of a treat.

Tomato and Kidney Bean Casserole
If you have extra time, use fresh chopped tomatoes instead of canned and perhaps add a few fresh Italian herbs as well. Otherwise, this is a quick and easy side casserole you can get in the oven in just a few minutes. You might also like this lima bean and cheese casserole recipe.

Crockpot Spinach Casserole
If you can't get your family to eat their spinach, try this creamy, cheesy and vegetarian crock pot spinach casserole recipe.
