Harusame, or bean threads, or cellophane noodles, are common ingredients in Asian dishes. They are often added in a variety of flavored salads.

Harusame Salad with Mayonnaise
This harusame salad is mainly flavored with mayonnaise and is easy to make. Apple adds sweetness, and kids enjoy this flavor of harusame salad.

It's another version of harusame salad flavored with soy sauce based dressing.

Cold Somen
Boiled and chilled somen (thin wheat noodles) are served with dipping soup and various toppings. I like to put grated ginger and chopped green shiso (perilla) leaves in the dipping sauce, but the toppings are countless.

Nyumen
Somen noodles in hot soup is called nyumen. Leftover boiled and chilled somen can be used in this dish.
