From Jolinda Hackett, your Guide to Vegetarian Food
Using a few goal-setting and NLP techniques, here's a few tips when thinking about making changes in the coming year: Think positively and make affirmative statements, rather than negative (ie. "I WILL eat healthier", rather than "Don't eat junk food"). Be as specific with goals as possible ("Eat more whole grains and vegetables" rather than "Eat healthy"), and use visual imagery to help your subconscious and your mind visualize and focus on your goals.

Resolution 1: Eat more whole grains
If you haven't yet tried cooking with whole grains, head out to the bulk food section of your natural foods store and try a little of each to see which you like best. Look for these, my favorite whole grains:
  • Quinoa
  • Barley
  • Bulgur wheat

  • Resolution 2: Eat more fresh fruits and veggies
Even if you're the type of person (like me!) who never thinks twice about making New Years Resolutions, eating more fresh fruits and vegetables is something most of us should keep in mind on a daily basis. Make your veggies your entree, instead of your side dish, and try eating more raw food meals.
  • Vegetable side dishes
  • Raw foods recipes to try

  • Resolution 3: Cut back on calories
Specific goals, or "baby steps" will help keep you focused and on track rather than vague ideas. That's why "reducing calories" is a much better goal than "lose weight". If this is on your to-do list in 2011, here's a few places to start:
  • Low-calorie vegetarian recipes
  • Fat-free vegan recipes
