Now, now, don't roll your eyes and delete this email and think, "Rice and beans? Boring!". Rice and beans don't have to be boring, and fresh home-cooked beans (rather than canned) are anything but! Rice and beans are healthy and nutritious, especially for vegetarians.

Italian rice and beans
I made this recipe using fresh parsley instead of the recommended Italian seasoning blend, and it was absolutely fabulous. It's a one-pot meal, and, if you use instant rice, it's ready in just a few minutes. So easy!

Rice and Bean Burrito
Got leftover rice? Leftover beans, too? Time for a burrito night! Slice avocados, shred some lettuce, warm some tortillas and make vegetarian burritos. Sour cream and cheese optional for vegans, salsa required!

Cold bean and rice salad
Still too hot where you are? Try this cold bean and rice salad made with Italian dressing, fresh herbs and fresh tomatoes. No oven needed if you have some leftover pre-cooked rice on hand.

Mango black beans and rice
See, I told you this newsletter wouldn't be boring! If you've never tried a Cuban or Caribbean-style beans and rice recipe, this is a quick, easy and simple one to start with. Black beans are simmered with spices, then paired with rice and mango. Yum! Now, wasn't that worth scrolling down for? For extra protein, try this with brown instead of white rice.
