Nothing beats a stuffed roast turkey for Thanksgiving, but once the holiday is over it can be hard to think of creative ways to use up turkey leftovers. Here are a number of recipes, including fried rice and turkey pineapple curry.

Egg Fried Rice
A dash of white pepper adds a bit of kick to this fried rice recipe submitted by a reader. Feel free to add extras such as cooked ham or roast pork.

Szechuan Beef
In "Land of Plenty," Fuschia Dunlop notes that this popular dish is actually a variation on another Sichuan dish made with dry-fried slivers of eel. As a reader notes, you can substitute other vegetables such as green pepper and celery for the carrots if desired.
