Japanese Nametake
Slippery simmered enoki mushrooms are called nametake. It's a good side dish to eat with hot steamed rice, especially for breakfast. When I make nametake, I keep it in a clean sterilized jar in the refrigerator so that I can eat them for a few days.

Japanese Recipe of the Week: Satoimo Soboro Goma Misoni
Satoimo (taro roots) are popular ingredients in Japanese autumn recipes. Satoimo is commonly simmered in soy sauce based dashi soup. I like the simple satoimo dish, but this miso and sesame flavored satoimo simmered with chicken soboro (crumbled meat) is good for a change.
