Hi everyone. It's the season for making pickled ginger. I bought 4 lb of fresh ginger roots last weekend and made a large container full of pickled ginger.

Do you make pickled ginger at home? It's best to use young ginger to make pickled ginger so that ginger change its color to light pink when pickled. Young ginger roots are juicy and easy to slice thinly also.

Japanese Recipe of the Week: Ikameshi
Ikameshi literally means squid rice in Japanese. Squid are stuffed with glutinous rice and are simmered in sweet soy sauce flavored soup. I like the chewy texture of sticky rice in ikameshi.

Mabo-don
As "don" means rice bowls in Japanese cuisine, mabo-don is a rice bowl topped with mabo tofu (mapo tofu) which is a spicy Chinese Szechuan dish. Japanese home cooked mabo tofu is usually less spicy than Szechuan mapo tofu. Even if you're not particularly fond of spicy food, I think you enjoy this rice bowl.
