One of my favorite early signs of summer is fresh sweet corn showing up in the markets, particularly if you're lucky enough to live somewhere with a farmer's market or a farm stand. It just doesn't get any fresher than straight from the farm. Take advantage of this lovely seasonal treat by preparing fresh corn every chance you get.

A barbecue favorite: Grilled corn on the cob
Ah, sweet summer corn. This time, it seems to be available no matter where you live. Take advantage of the bounty of fresh corn by grilling some up outdoors. Make sure to buy corn still in ths husks for the best grilled corn. Here's four ways to grill corn on the cob.

Curried sweet corn soup
Here's one way to prepare fresh summer sweet corn, by turning it into a healthy curried corn soup topped with cheddar cheese and filled with flavorful shallots and spices. To make it vegan and lower in fat, simply omit the cheddar cheese, or use a dairy-free vegan cheese substitute. You might also want to try this no-cook raw food corn chowder or this super creamy corn chowder soup.

Summer Sweet Corn Salads
Cooked, can or fresh and raw, sweet corn also goes great in a salad, perhaps with some beans, veggies or even in a pasta salad. Here's a few ideas to get you started:
  • Southwestern black bean salad (pictured)
  • Bell pepper and corn salad
  • Easy pasta salad with beans and corn
