Miss meat? Some vegetarians do, some vegetarians don't. If you're one of the former, no need to fret - there's so many great ways to mimic the flavors and textures of your former favorite meaty dishes, using homemade seitan or store-bought substitutes.

Store-bought chicken substitutes
Gardein is one store-bought meat substitute that's been popular lately (Oprah featured it on her show last year, and Whole Foods uses it in their deli). Here's a few ways to try it:
  • Grilled lemon "chicken" scallopini
  • Sage crusted vegetarian chicken cutlets
  • Cajun-grilled vegetarian "chicken"

  • Steak strips and deli slices
    A few other popular store-bought mock meats (other than veggie burgers, of course!) are frozen meat "strips" and deli-"meat" slices. You won't believe how meaty some of these can taste (and look!) Here's a few ways to try them:
  • Vegetarian "steak" strip fajitas (pictured)
  • Vegetarian deli sandwiches (Check out the picture!)
  • Easy Vegetarian "Chicken" salad

  • Meaty seitan dishes
    Seitan has been a popular meat substitute in Asia for literally centuries. If you haven't already discovered it, run to the grocery store right now, pick some up, and try it in one of these "meaty" recipes:
  • Seitan buffalo wings
  • Meaty seitan meat substitute (pictured)
  • White wine grilled seitan
  • Tandoori seitan (it really looks like meat, doesn't it?!)
