Now that the holidays are all finally over, you probably want a break from your kitchen. This week, try out some super easy dinner ideas to get a full meal on the table with little effort.

Simmer 10 minutes. Eat.
Soups and even chili can be prepared in less than 10 minutes using a few store-bought ingredients and some cheating chef tricks. If you don't like using so many canned ingredients, add in a few fresh ingredients, some sliced tomatoes, or a handful of spinach would both cook quickly. Even frozen veggies would perk up these super-quick speedy soups.
  • Dump and heat for this black bean soup
  • Heat ten minutes, eat tortilla soup
  • Tomato sauce + leftovers = lunch

  • Dip, Bake, Pair.
    Baked tofu takes time to cook, but you can be getting a massage or writing Christmas thank-you notes while it bakes. Dip tofu in a store-bought sauce, pop it in the oven, and then eat it with a quick cooking grain for a full meal. Couscous or instant rice is quickest, but if you've been reading a while, you know my personal favorite grain is quinoa (with barley a close second, for the record, but it takes longer to cook).
  • Slather and Bake BBQ Tofu
  • More Baked Tofu: More than 2 minutes, less than ten

  • Dump. Switch. Wait. Eat.
    Dump, switch, wait, eat? Yes, that's what you do with crockpot meals. Slow cookers were all the rage in the late 70s, and they're back again in this era of the busy cook. Dump a few ingredients in, switch it on, wait a few hours, and eat. Here's a few full meals in a crockpot:
  • Rice + lentils + spices = Dinner
  • Mash + layer + wait = Crockpot lasagna
  • Chop 1 onion + grains + beans = Crockpot chili
  • Tortellini + beans + tomatoes = Dinner

  • Mix, mix, bake.
    Try an easy chili and cornbread casserole for a quick and easy full vegetarian meal. Mix together some beans and tomatoes, then mix together some cornmeal and soy milk, then bake it and eat it. Done! Hopefully somebody else will do the dishes...
