I recently had dinner at an absolutely wonderful Lebanese restaurant. It was a feast, really, and I was reminded that Middle Eastern cuisine offers a host of options for vegetarians and vegans, whether you're dining our or cooking at home. If you haven't ever tried falafel, hummus, dolmas, tabbouleh or baba ganoush, it's time to try! Here's a few simple Middle Eastern recipes to get you started in your kitchen at home. Plus, share your blog with me and my readers!

Tabbouleh Salad
Scooped up with pita or just eaten as it is, tabbouleh salad can be a filling vegetable entree, or a light salad, depending on how it's prepared (and how hungry you are!). Add extra veggies if you like, and try one of these healthy whole grain Middle Eastern salads:
  • Quinoa Tabbouleh (pictured)
  • Edamame and Feta Gourmet Tabbouleh
  • Gluten-free Tabbouleh with Millet
  • Kosher Tabbouleh with Bulgur Wheat

  • Couscous Recipes
    I love cooking couscous because it cooks so easily. It really is as simple as boiling water. Here's a few simple Middle Eastern-inspired couscous meals easy enough for even the most dilettante chef:
  • Couscous and chickpeas (pictured)
  • Lemon dijon couscous
  • Couscous with lemon and mint
