Memorial Day weekend is the unofficial beginning of summer and the perfect time to have a backyard or beachside barbecue. Don't forget a vegetarian potato salad or pasta salad to bring along as a side dish. Plus, find out why Al Gore is on my naughty list.

How to Grill Tofu
I've put everything from veggie dogs (not recommended!) to pizzas to burritos on the grill, and if you'll be attending a cookout with me, you can be guaranteed there will be some serious garlic bread happening too. Tofu is great on the grill, but a few simple tips can help you do it right. Learn how to make sure your tofu is the best on the block with a few grilling tricks, marinades and barbecued tofu recipes.

Put a Panini on the Grill
Traditionally, a panini is an Italian sandwich grilled on ciabatta bread. But mostly, it's just plain more fun to say "panini" than "toastie" or "grilled sandwich", and, after all, that which we call a grilled sandwich, by any other name would taste as great. You can also grill up some veggies outdoors and use those to build a sandwich. Here's a few panini and grilled veggie sandwich ideas that you can cook on your outdoor grill or on a panini press:
  • Five-star mozzarella basil panini (pictured)
  • Portabella balsamic sandwich
  • Grilled zucchini and bell pepper sandwich
  • Apple cheddar panini
  • More veggie sandwiches and paninis

  • Getting creative with your grill!
    Sandwiches, tofu, veggies and of course, corn on the cob, it's all good stuff. But if you want to kick it up a notch, here's a few vegetarian and vegan dishes to grill up when you want to wow a crowd.
  • Grilled ice cream cake (pictured)
  • Balsalmic barbecued beets
  • Tequila-marinated portabella mushrooms
  • Grilled polenta with fontina cheese
  • Grilled cantaloupe and honey
