From Jolinda Hackett, your Guide to Vegetarian Food
A few weeks ago, I asked you to share your stories about how your health has improved by eliminating animal fats from your diet. I was expecting readers to share about lost weight, lowered cholesterol, and even reduced menstrual cramps and improved skin, but some of the responses were simply amazing and absolutely worth sharing. Read on for one reply that brought tears to my eyes.

How you beat lupus and control chronic disease
Here's one amazing way that a reader named Terra improved her health. She wrote:

I went vegetarian in March 09. I had never been able to give blood, due to decreased iron levels. After the earthquake in Haiti, I assumed they would need blood, so I went to a local Red Cross. For the first time in my life, my iron levels were high enough for me to give blood! That was the most rewarding benefit I've experienced!

Incredible. Read the rest of the responses, including people who've beat lupus, asthma and more by changing their diet, or, share your own, if you haven't already.

Why vegetarian?
Of course, improved personal health is just one of the benefits of reducing the animal foods in your diet. There's also global health, the environment, and of course, the animals always appreciate a vegetarian! What are your own personal reasons? Read what motivates others, and share your own reasons, if you haven't already.

Sugar-free Chocolate Oatmeal Cookies
For a healthy snack perfect for the lunchbox or after school, try these sugar-free oatmeal cookies sweetened with bananas and maple syrup. They're even healthy enough to grab for a breakfast on the go. I love these cookies! Add a handful of dried fruit or raisins for an even sweeter treat.
