Japanese Recipe of the Week: Rolled Pork with Vegetables
Thinly sliced pork is often used in Japanese cooking, and these pork rolls are quick to make. When I make pork rolls, I use colorful vegetables. It adds nice colors to your meals and bento lunch boxes. You can use your favorite vegetables or mushrooms for the filling.

Beni Shoga
Beni shoga is red pickled ginger as beni means red and shoga means ginger in Japanese. Beni shoga is used for garnishing many Japanese dishes, such as yakisoba and gyudon. Prepackaged beni shoga can be bought at Asian grocery stores, and it's handy to keep some in the refrigerator. To make beni shoga, ginger root slices are pickled in red plum vinegar (aka-umezu). I make beni shoga at the same time as umeboshi making in early summer.
