From Rhonda Parkinson, your Guide to Chinese Food
This week, a recipe for Spicy Governor's Chicken, plus no-cook vegetarian Spring Rolls, Chinese Shrimp Toast, Black Sesame Soup and West Lake Beef Soup.

Easy Crockpot Chicken
Just 4 ingredients (plus salt and/or pepper) are needed to make this easy crockpot recipe. It tastes great as is, or you can enhance it with extra spices or seasonings as desired.

Governor's Chicken
Here's an interesting idea if you're serving a larger group - 2 chickens are marinated overnight in a spicy mixture with hot habanero sauce and then combined with stir-fried vegetables in an oyster-flavored sauce.

Chinese Shrimp Toast
This popular hors d'oeuvre comes from Eastern China. The secret to making Shrimp Toast is the addition of a small amount of lard, which gives the shrimp mixture a light, airy texture when it is deep-fried. For a fancier presentation, feel free to use a good crusty bread, such as a French baguette, instead of plain white bread to make the toast.

No-Cook Spring Rolls
Made with pliable rice paper wrappers, these spring rolls are a lighter, healthier alternative to regular spring rolls. This is a vegetarian version, but non-vegetarians can add cooked shrimp or chicken. It includes a spicy dip made with hoisin sauce, and has been reader-rated at 5 out of 5 stars.
