The summer days may be long, but they're also packed with activities... Work, but also yard work, keeping an eye on the kids if they're on vacation, and much more. Cooking? Certainly, and the nice thing about summer recipes is that they tend to be quick. Pasta sauces cooked up in the time it takes the pasta water to boil, fish or meats cooked in the time it takes to assemble a salad, and so on.

Start with a can of tuna...
Yes, canned tuna is a nice standby to have in the house, and it's perfect in pasta sauce. A couple of options:

Scaloppine... (And More)
A hot skillet and a veal scallop are a quick and easy combination, quicker even than making the salad to go with the saloppine.

Pesce! (I.E., Fish!)
If you live near the sea, or have access to a good fishmonger, fish is wonderful in the summer months. My favorite is grilled fish, but there are many other options.
