I actually don't know of a single person who doesn't like Mexican Rice. I'm sure some exist out there somewhere, but not any that I have met. It is a wonderful side dish that goes with just about any Mexican meal and it works well with a multitude of substitutions so many cases you can use whatever you have one hand. Powdered garlic, fresh garlic, fresh tomatoes, canned tomato sauce or tomato paste can all be used to cook up a great Mexican rice. Check out the recipe below for some additional flavors.
