This has been an odd, and very difficult summer/fall in much of Italy, with terrific heat and dryness followed, both north and south, by torrential rains that caused considerable flooding and damage. In Central Tuscany, however, it has been remarkably dry, dry enough that mushrooms failed to sprout and some of the local fall fruit has been sub par. But today it has rained, steadily and at times heavily, for much more than the weather people said it would. Mushrooms to come?

Cheese: Frico with Onions
Frico is a specialty of Friuli Venezia Giulia: It's grated Montasio cheese (similar to Parmigiano but sharper and more crumbly) heated with other ingredients until it melts together and becomes crusty. In frico with onions Montasio works wonders with (you guessed it) onions.
