Here's a couple unusual ways to enjoy edamame - fresh young green soybeans still in the pod. Besides being just generally good for you, edamame is a great source of folic acid, protein and Vitamin K.

Edamame dip with pita chips
Trying to add more soy to your diet? Try this simple edamame dip, served with crisped pita for a low-fat and healthy way to add some green edamame to your diet. This easy edamame dip recipe is vegetarian, vegan and made with lots of fresh parsley and tahini.

Soy martini!
This really has nothing to do with anything, but it's one of those things I just had to share. While searching the internet for who-knows-what the other day, I came across this fascinating recipe for a soy martini, garnished with edamame soybeans! It's the perfect drink for vegetarians and vegans! You can get your vodka and your protein in one! If you do try the recipe, be sure you use a vegetarian Worcestershire sauce, as many contain anchovies, and use regular tomato juice, not clamato (yuck!).
