Have you had atsuage? They are deep-fried thick tofu (tofu cutlet) and can be purchased in Asian grocery stores.

Atsuageni
In Japanese cooking, atsuage are often simmered in savory dashi soup with various vegetables, such as carrots and daikon radishes.

Atsuageyaki
If you don't have much time to cook, atsuage can be simply grilled. It makes a simple appetizer with your favorite toppings.

Soba Salad
It isn't a traditional Japanese salad but is a refreshing dish to make. This soba salad uses soy sauce flavored dressing. Soba tend to get soggy, so I usually boil them until slightly hard.

Zaru Soba
Zaru soba is chilled soba noodles (buckwheat noodles) served on a bamboo basket (zaru). It's served with noodle dipping sauce (mentsuyu) and some toppings.
