Taco Meatballs or Meatloaf Recipe

It's all of your favorite taco flavors wrapped up in a meatball! Serve as an appetizer or as an entree with Spanish-style rice on the side. You can even use the mixture as a meatloaf. These meatballs are fairly mild, not spicy, but feel free to bump up the heat by using a hot salsa, hotter chiles, or additional chili powder. Spanish-Style Rice Recipe

Spanish rice varies from region to region, but I think you will definitely enjoy this recipe. It is enriched with salsa, cumin, and chili powder to give that Latin flavor. This version is fairly mild, but you can easily bump up the heat by using a hot salsa and/or increasing the amount of chili powder. Please do not skip the cilantro. Pomegranate Lamb Recipe

Pomegranate juice, red wine, garlic, sweet onion, lemon, and herbs make a tenderizing marinade for butterflied leg of lamb. Instructions are given for roasting in the oven (as pictured) for a no-fuss main dish. It will require a bit more attention to avoid flare-ups, but you may also cook this lamb on the grill.
