From Kyle Phillips, your Guide to Italian Food
Italy, as I have noted before, doesn't celebrate Thanksgiving. But I did get invited to trentino, in the far Northeast, to taste Trento DOC, a sparkling wine I knew little about. And am now kicking myself for not exploring it sooner, because it can be absolutely spectacular; The vineyards are mountain vineayrds, reaching up to past 600 meters above sea level (most of Champagne's vineyards are less than half that), and height translates into elegance and finesse in the wines. Most impressive, and sould you come across a bottle -- Ferrari and Abate Nero are two names that come to mind, one a larger winery and the other tiny, they will be perfect for greeting the holidays. Expect more on the wines when I get home and work my way though my notes.

Rice & Risotto
Italians have been growing rice for a very long time, and have developed many ways to prepare it. The best known is certainly risotto, which is a delicious and delicate alternative to pasta. It's also much easier to prepare than people think, and is extraordinarily versatile. In short, risotto is perfect in any occasion.
