By this time in the summer we have been enjoying tomatoes for quite some time,a nd to be honest this is a season I hope will never end. One can make some sauces to put away, and others to enjoy now.

Dino's Marinara Sauce
Dino has both whole tomato and pureed tomato versions for this most classic of Italian pasta sauces. The recipe makes a lot!

Tuscan Tomato Sauce
There's no dish quite so refreshing on a hot day as a bowl of pasta seasoned with lots of freshly made pomarola and a handful of grated cheese. This recipe expands well, and most households make gallons of it when the flood of tomatoes reaches its peak in August, forcing the prices down. It can also be adapted to canned plum tomatoes.

Neapolitan Tomato Sauce
