| | This has been a strange spring in Italy -- a month ago temperatures shot up into the high 20s (C, that's 80s for those dealing with F), something unheard of for early April, and though they have yet to return to those heights it is pleasant out at last (by Comparison, in Poland yesterday they had snow). And I find it much nicer to picnic now than in high summer, when the idea of approaching a hot grill seems like torture. A few ideas, for cookouts or even parties. | | La Bombetta Pugliese La Bombetta Pugliese is a specialty of the Valle D'Itria, south of Bari, and the folks at the Bombetta Pugliese stand in the street foods section of Torino's Salone del Gusto didn't mince words: "It's not healthy!" they cried, and indeed there isn't much healthy in a well-seasoned pork braciola swapped around a piece of cheese and grilled. "But it's good!" They shouted. And people came, drawn also by the music they were playing and the wonderful aromas rising from their grill: they couldn't keep up with demand... | Salumi! Salame is, well, salami in English. The word Salumi with a u instead is a generic term for cold cuts, everything from cooked ham through Calabrian N'Dduja. In other words, many delights for a cookout or picnic, and just the thing if you are where you can't fire up the grill -- say in a park. | Oh Fiorentina! Or, Italian Steak Cooking You might not think of Italy as a land of steaks, but parts are. In particular, Tuscany is known for the bistecca alla fiorentina, a THICK porterhouse steak (if possible from Chianina beef, which are huge animals) grilled over hardwood coals. Properly done it's fit for the Gods, and something you will never forget. | Insalata di Riso At a cookout or picnic the side dishes are just as important as the food of the grill, and perhaps even more so. One of my favorite dishes is insalata di riso, chilled rice salad, in part because it's more a procedure that a recipe -- no two batches come out the same, and it therefore never becomes boring. | | | | Italian Food Ads | | | | Featured Articles | | | | | | | | Sign up for more free newsletters on your favorite topics | | | | You are receiving this newsletter because you subscribed to the About Italian Food newsletter.
