Classic French Dishes

From Rebecca Franklin, your Guide to French Food
Today we have recipes that would, at first glance, be considered bland, diet-food, too hard to prepare, or simply not enough. Instead, take a closer look - and taste - of a vibrant bean soup, an exquisitely rich salad, a genuinely easy brioche, and a deceptively small maple pie just in time for sugaring season.

White Bean and Sage Soup Recipe
White beans sometimes carry the connotation of being boring. I prefer to view them as a delicious, blank culinary canvas, though. For one, I think their creamy texture is nothing short of addictive; it adds a velvety mouth-feel to any dish, without adding any fat. Combine that with the fact that they're a great source of inexpensive protein and they're almost impossible to cook wrong. This white bean and sage soup recipe is punched up with a classic herb and bean combination to delicious effect.

Salad Lyonnaise Recipe
This salad Lyonnaise recipe, also known as poached egg salad, is an extravagant entree salad. A base of frisee greens is piled high with crumbled bacon, savory croutons, and a rich, poached egg and then drizzled with tangy shallot vinaigrette. Aside from the enticing red, yellow, and green contrasts of this delicious meal, who can resist a plate of bacon, eggs, and bread courageous enough to be labeled a salad?

Simple Brioche Loaf Recipe
Subtly sweet brioche loaf is a humble version of the more time intensive classic recipe. The simplicity of the preparation is deceptive, though; the delicate texture and heavenly aroma rival any traditional brioche found in Paris.

Maple Sugar Pie Recipe
This Canadian maple sugar pie recipe is one of Quebec's most famous desserts. The intense maple pie has surprisingly few ingredients and can be adjusted according to your personal tastes. It tastes wonderfully luxurious garnished with both whipped cream and ice cream. The results are a sweet-as-candy treat that can be divided into 12 to 14 petite servings, making it a great choice for a party!
