This week, try out some super easy dinner ideas to get a full meal on the table with little effort. | | Simmer 10 minutes. Eat. | Dip, Bake, Pair. Baked tofu takes time to cook, but you can be getting a massage or writing Christmas thank-you notes while it bakes. Dip tofu in a store-bought sauce, pop it in the oven, and then eat it with a quick cooking grain for a full meal. Couscous or instant rice is quickest, but if you've been reading a while, you know my personal favorite grain is quinoa (with barley a close second, for the record, but it takes longer to cook). Try an easy chili and cornbread casserole for a quick and easy full vegetarian meal. Mix together some beans and tomatoes, then mix together some cornmeal and soy milk, then bake it and eat it. Done!
