If you're a vegetarian who has never tried preparing dried beans from scratch, you simply must try it! The flavors of freshly prepared beans just don't compare to canned. Plus, I've just published by first vegan cookbook, The Everything Vegan Cookbook.

How to prepare beans from scratch
You do need some extra time to prepare beans from scratch, but they don't need much attention while soaking and simmering. This video will show you how.

Mexican Black Beans and Rice
Use dried black beans to prepare one of the cheapest and most filling dishes on the planet: black beans and rice. Depending on the spices, you can change the flavor any way you'd like. This recipe is for a Mexican-style frijoles negroes, served with nutritious high-fiber brown rice.

More foods to buy in bulk
Of course, one of the best reason to use dried beans is that the cost per serving is practically nothing. Shopping in the bulk bins is also great for the environment because there's no packaging. Just be sure to bring your own re-usable or recycled bags to fill up! Here's a few of the foods I love shopping for in bulk. Pictured: Powdered vegetable broth is one of my favorite things to buy in bulk. I add it to everything for extra flavor!
